ONE POT CHICKEN AND VEGIES

You will need :

4 chicken thigh fillets, trimmed and cut in half

1 onion, chopped in chunks

½ carrot, sliced thinly

1 zucchini, sliced thickly

1 small or ½ large potato, chopped in chunks

1 cup mushrooms, chopped

1 pkt chicken noodle soup

1 cup water

2 tablespoons Worcestershire sauce

salt and pepper to taste

1 tablespoon cornflour blended with water to a thin paste            

Method :

Combine all ingredients, except cornflour, in a camp oven on rack over coals and bring to boil, move to cooler coals or hang on tripod and simmer, stirring occasionally, till cooked.  Add cornflour and bring back to boil, simmer till sauce has thickened.  Serve.

CHICKEN NACHO CASSEROLE

You will need :

          1 large packet plain corn chips

500g chicken mince

          1 onion, chopped

          2 tablespoons rice bran oil

          1 pkt taco seasoning mix

          425g tin whole tomatoes

          1 cup cheese, grated

Method :

 In camp oven on rack over coals, fry onion in oil, add mince and brown.  Add taco mix and tomatoes, cover and simmer for 20 minutes.  Top with corn chips and then grated cheese.  Cover and place a few coals on lid.  Cook for 10-15 minutes until cheese melts.

CHICKEN ON THE FIRE

You will need :

         4 chicken Maryland

          2 tablespoons olive oil

          1 onion, chopped

          ½ green capsicum, seeded, chopped

          2 tomatoes, chopped

          1 teaspoon garlic, minced

          2 teaspoons dried coriander

          salt and pepper

 Method :

 Moisten 4 doubled, square sheets of heavy foil with the oil, then place 1 piece of chicken on each.  Season.  Combine all other ingredients in a bowl and mix well.  Divide between chicken pieces.  Fold and seal foil.  Cook in coals for about an hour, turning occasionally.

ONE POT CHICKEN (or beef)

You will need :

 4 chicken thigh fillets, cubed

2 rashers bacon, trimmed, finely chopped

1 large brown onion, chopped

1 tin whole tomatoes

1 potato in large chunks

1 cup pumpkin chunks

1 cup frozen peas

1 dessertspoon each of minced garlic and ginger

Salt and a pinch or 2 of dried rosemary

1 teaspoon chilli (optional)

½ cup grated cheese

Method :

 Combine all ingredients except chilli and cheese in camp oven. Suspend on tripod over camp fire and bring to the boil.  Simmer for at least an hour, stirring occasionally.  Add chilli 10 minutes before serving.  Stir in cheese and serve.

STIR FRIED CHICKEN AND SNOW PEAS

You will need :

3 chicken thighs, trimmed and cut into strips

1 tablespoon fish sauce

1 tablespoon oil

1 shallot, sliced

1 teaspoon minced chilli

1 teaspoon minced ginger

50g snow peas, blanched

50g broccoli, blanched

150g cabbage, finely sliced and blanched

¼ cup chicken stock

200g pkt thin hokkien noodles

Method :

 Boil a saucepan of water and pour over noodles.  Separate with fork.
Heat oil in large pan on rack over coals and stir fry chicken with fish sauce, shallots, chilli and ginger for 1½ – 2 minutes. Add vegies, noodles and stock, salt to taste.  Stir fry for 2 minutes.  Drain noodles and add to pan.  Stir and serve immediately.

Try it it’s yumm.

ONE POT BEEF (or chicken)

You will need :

 300g rump steak, cubed (or enough for 2)

2 rashers bacon, trimmed and finely chopped

1 large brown onion, chopped

1 tin whole tomatoes

1 potato in large chunks

1 cup pumpkin chunks

1 cup any other vegetable you travel with

(carrot, capsicum, celery, frozen peas)

1 dessertspoon each of minced garlic and ginger

Salt and a pinch or 2 of dried rosemary

1 teaspoon chilli (optional)

½ cup grated cheese

 Method :

 Combine all ingredients except chilli and cheese in camp oven. Suspend on tripod over camp fire and bring to the boil.  Simmer for at least an hour, stirring occasionally.  Add chilli 10 minutes before serving.  Stir in cheese and serve.
